Sodium metabisulphite (Na2S2O5) may seem unfamiliar, It is white or yellow crystalline powder or small crystals and with irritating smell. but it is closely linked to our daily lives. As a common food additive, it is widely used in candied fruits, dried fruits, vermicelli, wine and other foods to preserve freshness, resist oxidation, maintain color and bleach, keeping food from spoiling easily and looking bright.
